I have been very busy touring for the last 10 days in the US with the Silk Road Ensemble. Things have been pretty intense, because of certain news concerning the country we are touring, and given that the majority of this ensemble is made of people that are not originally from the US but living over here, you can imagine there is an understandable level of concern.
A few days ago I was asked by someone at silk road to put together a quick bread recipe for a particular event (a few other members are contributing too). I don’t bake much bread but when I suggested focaccia, they accepted enthusiastically.
So here my trascription of a simple focaccia recipe and I want to share it you.

I'm definitely going to try this. A few questions: what is malt? Also is 00 bread flour like regular pasta flour, or strong white flour, or something else?
