It’s funny, I was in Bilbao last week and I had reassure the owner of the restaurant that, yes, I was okay with whole, head on, tiger prawns. They appear to be used to Americans not wanting to peel their shrimp! Your comment about crawfish made think of that moment. Also, if possible, pass along my regards to Rhiannon. Food in the US tends to be visually sanitized for the general population. Here in Europe they still think nose to tail eating is normal.
