Oh dear Francesco, if you've found pour over you've just opened a whole new front in coffee nerd-dom! Soon your kitchen will be proliferating with extra grinders, elegant kettles and various brewing contraptions. The V60 Is my go-to brewer, I don't vary the recipe too much but brewing at around 80 degrees seems to be the key to get nice bright acidity which is the flavour profile I like. The three minutes spent dripping water into the V60 is a nice ritual of calm at the beginning of the day. An Aeropress with a Hario hand grinder is a good option for road trips.
