Interestingly enough al dente seems to be a very recent fashion in Italian cuisine mostly propelled by advertising. If you look at books just even a 100 years old you’ll be horrified 🫣. Anyway I’m teasing you here…I guess it’s definitely topic for a piece. Thanks for the suggestion!
