Aloha Francesco, I use a recipe from the internet that basically makes baked french fries from eggplant. Seasoned flour, egg wash, and Panko/paremsan; arranged on a mesh baking rack, 425F for 15 minutes! Serve with favorite dipping sauce...sweet chili sauce with chives, basil, green onion and mint. PS - I grow Calliope eggplant...small round and zebra striped. Very mild flavor.

Sounds great! This is quite similar to the breaded aubergines I mention in the piece. They work very well baked and even crispier in an air fryer!

Gen- There was a fantastic restaurant in Seattle, Poppy, that made the best fried eggplant and they were topped with salt flakes and drizzled with honey. So delicious!

Wonderful, Francesco! More plants to try in our garden 🙂. Very hard to find seeds in the US, only lunga so far. The daterino tomatoes here are coming along quite well. Can't wait!

Making plans to visit Sicily! All these varieties of aubergines reminds me of when I learned about the array of tomatoes one could grow. Variety is the spice of life!

Do you know MELANZANA ROSSA DI ROTONDA? Looks very interesting, and seeds are available here. Can you sew some seeds of Melanzana violetta Palermitana into your pants hem to bring back on your next visit?

I found seeds for another Sicilian melanzana: Rosa Bianca. I'm going to try to get it going this summer, late tho it may be. I'll grow it in a giant pot and bring it in if the weather turns. https://www.rareseeds.com/eggplant-rosa-bianca
